Maple Cinnamon TigerNut Pancakes

Tigernut flour pancakes with warm maple syrup drizzle and a hint of cinnamon. Grain free, nut free, and vegan.



  • 1 cup tigernut flour
  • 1/4 cup arrowroot powder (or sub tapioca starch or potato starch)
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  • Pinch salt
  • 1 tsp apple cider vinegar
  • 1 tsp vanillla
  • 1/2 cup tigernut milk (or milk sub)
  • 2 tbsp pure maple syrup


  1. Heat frying pan to low/medium heat
  2. Mix apple cider vinegar with milk and let sit for 5 minutes
  3. Mix dry ingredients well in a separate bowl
  4. Add vanilla and maple syrup to milk mixture and pour over into dry ingredients
  5. Mix until well combined
  6. Melt coconut oil in frying pan
  7. Spread batter in frying pan until about 4 inches wide and 1/8 inch thick
  8. Cook about 3 minutes on each side until firm (watch for burning)
  9. Serve drizzled with warm maple syrup, sliced tigernuts, and a pinch of cinnamon
